1 Week Down. 15 More to Go.

Can you tell that I’m excited for the weekend to be here?

Now all I have to do is make it through two classes today and I’m literally homeward bound! One positive thing about your parents forcing you to take up your car second semester is that you wait on NO ONE!

This first week of classes has gone great. I love all of my teachers so far. Here’s a list, just for reference of what I’m taking:

Spring-Schedule-2013

I’ve been keeping up with all of my assignments so far, which obviously isn’t that hard since it’s dubbed “syllabus week” for a reason. Another thing that I’ve been working on is talking with more of my classmates, and trying in general just to be more social with everyone. So far so good, but I’m not really doing much with others outside of class. I guess it just takes time.

The GAPS protocol is going great. Other than a teeny tiny little mistake I made (underestimating how much food I needed to bring to school) all has been going pretty well and my stomach is hurting a lot less.

On my way home I plan on stopping by Kroger’s to pick up some more organic vegetables for my meals this weekend. I also asked my mom to put on a chicken or roast in the crock pot for me so that I’d having something to eat right when I got home. I know I’ll be starving!

This weekend I hope to introduce a few more foods and progress to further stages. A few things that I want to try include making casseroles with herbs, adding avocado, and trying out a few other vegetables like spaghetti squash, onion, cauliflower, and peas. If I only successfully accomplish one of these things I’ll be happy though. Progress is progress.

To get inspired for some cooking when I get home, I made a secret board on Pinterest (love those things) and have been pinning some GAPS Intro-Friendly recipes. I made it secret because I highly doubt my friends want to see bone broth pictures and a gazillion ways to cook butternut squash. But, I know YOU all do!!

So that’s why I’ve decided to bring back FFF. Friday Food Finds. GAPS style!

Notes: Will omit celery because of allergy and use broth in place of water.

Notes: Will use oil instead of butter, and will omit the creme and vinegar.

    I love Ryan Gosling and will see any movie with him in it, regardless of what it’s about…case in point, we watched Drive while Joe was home…way more violent than I expected…but I still loved it because of Ryan 😉 And I second the creamy chicken and thyme soup…love that combination together 🙂

    • I really want to watch Gangster Squad because Ryan Gosling and Emma Stone are in it together, but I have the same issue. Pretty violent I think, but I have a feeling that it’ll be good 🙂

    My favorite herb is dried oregano. It goes well with anything!
