My Newest TV Obsession (And the Pancakes You Should Eat While Watching It)

I think Raymond Reddingtion may be my new favorite fictional bad guy. I also may be slightly idolizing over Elizabeth Keen and her super exciting job (perhaps not the whole abused-by-father and my-husband-is-not-who-he-says-he is backstory though… but that’s beside the point).

In short, The Blacklist is my newest television obsession. It has all of the necessary must-have pieces to be a potential binge-watching series. That is, if I ever fall behind on watching it on Hulu the day after they premiere. Which is unlikely.

There’s an intriguing criminal, a relateable main character, a twisted, action-filled plot in every episode, and lots of hidden secrets. Basically it’s perfect.

So do yourself a favor and if you haven’t already seen this show, go watch it. Now. And if you have watched it already, go watch an episode again just for me. Or scavenger YouTube for the preview of next week’s episode (oh wait, I already did that for you 😉 ).

But first, make these pancakes so you have something to delicious to eat during the commercial breaks.

Paleo Strawberry and Chocolate Chip Pancakes

Adapted from my Unbelievably Grain-Free Berry Pancakes

Grain/Gluten/Wheat-Free, Paleo/GAPS-Friendly, Nut/Dairy-Free Option

Makes two batches of three pancakes

Paleo Strawberry and Chocolate Chip Pancakes

Ingredients:

  • 3 eggs
  • 1 tbsp honey (optional)
  • 1 small banana
  • 1/4 cup light coconut milk
  • 1 tsp vinegar (I used apple cider vinegar)
  • 1/2 tsp vanilla extract
  • 3/4 cup almond flour (or other nut/seed flour)
  • 1/4 cup coconut flour
  • dash of sea salt
  • 1 tsp baking soda
  • 1 cup strawberries, frozen or fresh, sliced
  • carob or chocolate chips/chunks (homemade)

Directions:

  1. Preheat griddle to 350 degrees (or a pan to about medium heat). Coat with coconut oil, ghee, or cooking spray to prevent sticking.
  2. Put all of the wet ingredients into a food processor and blend until smooth.
  3. Then add the dry ingredients and combine again.
  4. Using a 1/3 cup measuring spoon scoop portion out the batter onto your griddle in medium-sized circles, spreading with the back of the measuring cup if too small.
  5. Cook for approximately three minutes, then place a few strawberry slices and carob/chocolate chunks on each pancake. Cook for another minute or two until the side facing up is bubbly. Flip and cook for approximately four more minutes. Repeat with remaining batter and serve!

  1. You guys get all the best shows- I’ll have to get some recommendations! I’ve been really into Breaking Amish- a ‘reality’ show but its clearly scripted. Still good though!

    Best pancake recipe- what a silly question. No favourites here 😛 Yours look incredible! By the way I have a FODMAPS friendly recipe to post next week- Hopefully it’ll suit your requirements 😉 My friend follows the FODMAPS diet and I’m having them over for brunch on the weekend so conjured up something which hopefully goes well!

    • Is Breaking Amish an American show? I feel like I have heard of it before… We certainly have a lot of Amish around here driving around in their little black buggies!

  2. I’ve never heard of The Blacklist, sounds interesting! I’m currently addicted to a programme in the UK called The Great British Bake-Off. It’s a baking competition and it’s so good. The challenges are stupidly hard (to me) but the bakers are amazing.

    • There are so many good shows out this Fall and The Blacklist is definitely at the top right now after I watched the first two episodes last night. A Bake-Off shows sounds like it would be super fun to watch! I love cooking shows as long as they aren’t dramatic/reality tv-like. I bet those bakers are amazing to watch 🙂

  8. What’s my favorite kind of pancake?! You know that’s like asking a mother which of her children she loves the most, right? Hahaha! Great combo with the chocolate and strawberries! I swear adding fresh fruit to pancake batter just takes it to a whole new level!

    I’ve never seen or heard of The Blacklist…I’ll have to check it out…AFTER I finish marathoning New Girl season 2! Ha!

  9. I always feel so out of the loop when people start talking about their favourite TV shows — I can’t even remember the last time I turned on my TV. I’m assuming it still works, but I wouldn’t even be able to tell you for sure. I feel like I’m missing out, but I just can’t seem to commit to keeping up with any shows.

    As for pancakes, my favourite will probably always be my mom’s fluffy buttermilk pancakes sprinkled with powdered sugar. They remind me of Saturday mornings spent watching cartoons 😀

    • I honestly don’t remember the last time that I watched TV either. Maybe 3 or 4 weeks ago? I only ever watch it on the weekends that I’m home. Otherwise I just catch up on shows online. I’m simply awful at keeping up with shows but I’m going to try this Fall. There are so many good ones out.

      I’m a traditional pancake girl too. Nothing can beat them.

      My Saturday morning cartoon fests with my brother were decidedly pancake-less. We were left to our own devices while my parents slept in. When we were younger that meant mixing up a box of cornbread, cooking it in the microwave, then taking big slabs into the living room on plants to drench in syrup.

  11. I actually have it in my Hulu queue right now but haven’t had the time to watch it…which now I obviously will! I have way too many shows though that I am watching right now but usually only watch it on the weekends when I actually have time!

    • You should certainly make time to watch it. What other shows are in your queue? I’ve seen Nashville, The Lucky Ones, and The Michael J. Fox show so far… (just the first episode of each over the past few weeks, not much time for anything else!).

    • Chocolate + Strawberries is a great combo. Next time you make pancakes just throw them in and you’re in for a treat!

      I figured it would be kind of a dud… All shows that have good commercials end up being that way I think. Haha. But it actually has quite believable characters and a good story line so far. I hope it stays that way and doesn’t get too crazy.

  15. oh my goodness! Paleo pancakes with strawberries? Flawless my friend, flawless. My good friend Oly has been ranting and raving about Blacklist lately. She insists that it’s a must watch, but I haven’t gotten around to it. Your little description makes it sound worth my while though. I’ll have to try a few episodes and get back to you! Lately I’ve been into Breaking Amish. It’s a sort of ridiculous reality show, but my brother and I shamelessly watch it!

    • At least watch the first episode and I think you’ll be hooked! Now, it is a little dark. Not too dark in my opinion, but that would be the one con for some people probably.

      Arman said that he likes Breaking Amish too. I don’t really watch reality tv much but it sounds kind of funny just by its title.

  16. I have too many television shows now that I record and don’t watch. Shh, don’t tell my DVR so I probably won’t be adding this to the list just yet, but those pancakes on the other hand, I want. Especially with the sliced up strawberries. I’d skip the chocolate, which would completely disappoint the Hubby, but if I never told him chocolate was a part of the original, he’d never know. The poor man has no idea how many times I’ve replaced the chocolate with fruit in muffin recipes. Hee, hee.
    These pancakes look phenomenal. That first picture is the show stopper. You had me right away.

      I probably would skip the chocolate too if making these for myself. I would choose fruit any day over chocolate!
