What I Ate at Whole Foods

I come to you, reaching out of the depths of mountains of school papers and group projects. I literally just opened/closed over 15 office documents in the past 48 hours and about half as many excel spreadsheets. Also, to add even further to the stress that is my final exams next week, I currently am in the interviewing process of three…. THREE internships. I feel so blessed, but at the same time, I’d rather just apply, interview and be accepted at one. However, beggars can’t be choosers.

Yesterday I had an in-person interview where I had to drive 2 hours south for literally 10 minutes of talking. Then I drove 2 hours back. Not before stopping at a Whole Foods though which was just minutes away. There were actually two WF markets to choose from. Jealous.

I went to the salad bar and got a nice big box. There was kale salad on top, marinated mushrooms everywhere, and both grilled chicken and grilled pineapple beneath. I thought that the cold food would bother me a little (especially with the mushrooms), but I ended up loving all of it!

And because I am so nice, I went around and found recipes for all of the food so that you can make the recipes at home and enjoy them too 🙂

Garlicky Kale Salad from Eating Bird Food

I am going to make this recipe as soon as I can find some good, fresh Kale and I encourage you to do the same.

Grilled Pineapple from Skinny Taste

This one isn’t exact, but pretty close and just as delicious I think 🙂

Marinated Mushrooms from The Vegan Tummy

I also had the mushrooms warmed up with some crock pot beef for breakfast this morning and they were still super tasty.

Grilled Chicken How-To from Serious Eats

This one is basic, but I like how they only soak it in salt water. No celery/tomato/corn/gluten!

I also purchased a few other items while at Whole Foods.

First was digestive enzymes and ginger pills. Both are supposed to help with digestion and bloating. I notice a slight difference when taking them. (Update as well: Another doctor’s appointment this Saturday so cross your fingers for me).

Next up I bought some sea salt. It’s great that Whole Foods doesn’t use a ton of salt on their salad bar items, but I knew from past experience that I would need to add a little so I went to the bulk pins and purchased some pink sea salt to sprinkle on my food.

Don’t you just love my nice red, swollen hands? Our A/C has not been working for the past two weeks despite maintenance “supposedly” fixing it. So it basically feels like a sauna in here, only amplified by my hot lap top on my lap.

I also bought two packs of gum while there. I haven’t chewed gum in probably three or four years so this was kind of a weird purchase for me. I stopped chewing gum because of the artificial sweeteners mainly so I like that this gum is made with natural sweeteners and no weird ingredients. It really helps me concentrate while driving too and I went through about 4 pieces in a (successful) attempt to stay awake on my long drive back.

The drive was made even longer actually by an accident. When I passed by it looked like one car had rear-ended the other, and two ambulances were already on-scene so I think everyone was okay.

Just for reference, I took this picture while stopped and waiting for the cars in the right hand lane to let me switch over.

I will be notified if I need to come in for a secon interview sometime this week. For the second intership I had a phone interview last week and should be contacted shortly as well (after I fill out a second employment application). The third internship is still in the beginning stages, but that is the one I probably want most because it is so close to home and I know someone who works there.

**Pardon the interruption. I was just interrupted in the middle of this post by another fire alarm. Suspiciously our hall didn’t smell like burnt popcorn until AFTER we came back in from the fire alarm. It’s a conspiracy!**

And now it’s seriously too late for me to be up. Goodnight, sleep tight, and pleasant dreams to you.

I’m linking up this post with Jenn at Peas and Crayons for What I Ate Wednesday (but really Monday…. shh. 😉 ). Make sure after you leave a comment below to check out the rest of the blogger contributions!

Lots of Eats… Not So Much Sleep

You know it’s going to be a long week when you already start off Monday sleep-deprived. All last week I did really well with going to bed at a decent hour and being fully rested. Then Sunday night when I was working on a group project from home, my teammates were just not responding via e-mail like they needed to. Since our decisions were due at 7:00pm I had to be at my e-mail constantly checking for a response from them. In the end only one of them e-mailed me back. *Sigh* This is why I hate group work.

Nevertheless, the decisions were in on time (Just 8 more rounds to go. Yippee!…). But that left me still at home at 7:00pm with a few more things to pack. Realistically I wouldn’t have gotten back to my dorm room until 10:00pm or later. And there was still another assignment I had to do for Monday…

So I decided to stay home, do my homework, and leave early Monday morning to be back in time for my 9:30am class. Those two hours were tough as I was extremely tired and I had to stop half way there because I was worried I was going to fall asleep. Never again (you can quote me on that one!).

Now I am typing up this WIAW at a ridiculous hour because I just got back from watching Divergent with a few of my friends. Yes, I already saw it last Saturday, but I rarely have time to do anything social because of all of my schoolwork so I decided that I would take a quick nap after my Accounting class… and gear up to watch the movie at 9:40pm. Yikes.

This is going to be a quick post today, and my posts will probably be staying sparse in the foreseeable future with more exams and group projects this week.

I’m linking up with Jenn at Peas and Crayons, sharing all of the food I made on Saturday and Sunday!

Breakfast

One day for breakfast I made my dad a super simple stack of pancakes. 1 1/2 bananas + 3 eggs + 1/4 tsp baking powder. The texture was surprisingly better than normal and not quite as eggy as when I’ve made them in the past. They will never be quite as perfect as James‘s though 😉

 Lunch

I had every intention of going to church this Sunday, and was even completely dressed and ready to head out. Then my new medication from my doctor kicked in and basically left me tied to the house for the rest of the day. Fun. It’s kind of on-and-off with whether it sort of/doesn’t work. Anyways, I felt awful because I was supposed to help my mom with the nursery that morning. To make up for it, I cooked her lunch that was ready when my dad and her got home.

First I made a simple homemade BBQ sauce. No crazy ingredients here!

Easy Homemade BBQ Sauce

Adapted from this recipe

Ingredients:

  • 6 oz tomato paste
  • 1/4 cup water
  • 2 tbsp coconut sugar
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup
  •  2 tsp Worcestershire sauce
  • 1 tsp prepared mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp chili powder
  • salt and pepper to taste

Directions:

Combine all ingredients in a small pan and heat on the stove for a few minutes until ready to serve.

Then I forked a few sweet potatoes and microwaved them. While the potatoes were cooking I mixed a few cups of homemade shredded chicken and heated it up on the stove. To put it all together just slice open the sweet potatoes, fill with the BBQ chicken and voila!

Snacks

These below are homemade plantain chips that I made in the microwave. Super easy and I’ll experiment a few more times before sharing the directions.

I already shared the recipe for my yummy Paleo Peppermint Patties. You need to make them STAT.

Over the weekend I experimented with one more dessert recipe. I made a pecan honey no-bake base, put a layer of homemade vegan caramel on top, and then a layer of homemade chocolate on top of that. It all tasted great but I think the caramel could be put to better use. More experimentation required! 🙂

And that sums up everything I made over the weekend! Off to get some ZZZs and I’ll catch you all later!
